After our recent coffee gathering there were requests for the recipes that had been used to make the cookies that Clare and Ruth brought to the event. After consulting with Julia Child, Betty Crocker, Paula Deen, Duncan Hines, Graham Kerr, and Gordon Ramsay, I’ve determined that it is okay to release this sensitive information, and the two recipes follow below.
Ruth’s Recipe for Ginger Cookies
Ingredients:
3 / 4 cup shortening (I use brick margarine)
1 cup white sugar
1 /4 cup molasses
1 egg
2 cups flour
2 tsp baking soda
1 tsp cinnamon
1 / 2 tsp cloves
1 / 2 tsp ginger
1 / 4 tsp salt
1 cup raisins (generous)
Directions:
Cream shortening and sugar. Add molasses and egg. Mix well.
Combine flour, baking soda & spices. Add to creamed mixture. Mix well
Add raisins; stir in by hand
Chill for at least 1 hour (I have left it in the fridge for 24 + hours)
Shape into 1 " balls (or smaller if you wish a smaller cookie).
Roll in granulated (white ) sugar.
Bake at 350 degrees for 10 to 12 minutes.
Flatten with a fork when you take them out of the oven.
Clare’s Recipe for Pecan Cookies
1 Butter Pecan cake mix
2 eggs
1/2 cup vegetable oil
Preheat oven to 350 degrees. Mix all 3 ingredients together.
If desired , add 1/2 cup of crushed pecans.
Drop the dough by teaspoons onto an ungreased cookie sheet and bake for 8-10 minutes.
You may wish to use chocolate or vanilla cake mix and add 1/2 cup of chocolate chips, nuts, dried cranberries or raisins.
Editor’s Note: I read the recipes twice but there is definitely no mention of adding any form of alcohol. Pity, that.
